Coconut Almond Granola


Your parfait, chia seed pudding, and sweet potato pie just found their perfect paring!

Granola is typically hard on your waistline and budget, while coming in soft on flavor, texture, and freshness. We said enough. Everyone should have the luxury of being greeted by sweet, salty, crunchy, buttery goodness in the morning without negative repercussions. With plenty of ways to make it your own, this versatile, customizable gem is eyeing a spot in your weekly rotation.

Recipe

6 C. rolled oats
2 C. coconut flakes, unsweetened
1 C. almonds, chopped
1 C. pecans, chopped
1 C. coconut oil (or butter), melted
1 C. craisins (or raisins)
½ C. flax seeds, milled
¼ C. honey
¼ C. maple syrup
2 tsp cinnamon
1 ½ tsp salt

To Make

Preheat oven to 300 degrees Fahrenheit. Mix all ingredients, aside from the flax and craisins, in a bowl. Spread the mixture on a large baking sheet in a thin layer. Bake for 15 min, stir, and bake for another 15 min. Remove from the oven and sprinkle on flax and dried fruit. Let the granola sit on the baking sheet for another 10-15 minutes so clusters can form.

To Meal Prep

Make a double batch just as instructed above and freeze in a sealed ziplock bag or glass container once cooled. Use straight out of the freezer for added crunch.

Use as cereal with milk or to top yogurt parfaits, chia seed pudding, holiday sweet potato pie…the options are endless.
