Best Berry Baked Oatmeal

Minimal effort, maximum deliciousness.

15 min of prep at night seems a trivial ask when you get to wake up to the smell of cinnamon wafting through the air and a nutrient dense meal ready to delight your tastebuds. This make ahead medley of fruit, oats, eggs, and spices is well above the sum of its parts.

Recipe

2 C. oats, rolled
1 ½ C. milk (or almond milk)
2 eggs
¼ C. maple syrup
1 tsp vanilla
½ tsp salt
½ tsp cinnamon
1 ½ tsp. baking powder
2 C. mixed berries (Katie’s version, 1 C. Raisins and 2 Chopped Apples)

To Make

Preheat oven to 350 degrees. Mix all the ingredients, aside from the berries, together. Fold in the berries and pour into a lightly greased pan. Bake until the center is set—usually around 25 minutes. Enjoy right out of the oven or prep the night before for an easy breakfast!

Note: if you use frozen berries cooking time will be approx 20 min longer than fresh.

To Meal Prep

Freezer Prep? No problem! Just mix the raw ingredients and pop in the freezer. Allow to thaw the night before, pour into a greased pan and cook as normal!
