Mama’s Lettuce Wraps

Summer calls for light, fresh, fast meals…

This is it. Our mother first discovered this recipe in a clean eating magazine and it’s been a go-to ever since. I mean, what’s not to love about piles of steaming beef (raised right outside your window) seasoned to perfection, served in a crunchy lettuce boat? Lime, sugar, salt, and jalapeno ensure every tastebud is engaged, creating a sensational culinary experience. Or maybe it’s just us…you be the judge!

Recipe

3 lbs lean ground beef
6 T. lime juice
3 T. brown sugar
3 jalapeños, chopped, ribs and seeds removed
1 T. sesame oil
3 tsp. ginger, frozen (fresh or dried to taste)
1 tsp. salt
6 T. cilantro
1 C. chives
Romaine lettuce

To Make

Partially brown ground beef and remove any excess fat. Add in lime, sugar, jalapeno, oil, ginger and salt. Continue to cook until jalapeños are soft and meat is fully done. 10 minutes before serving stir in chives and cilantro and allow them to gently wilt. Pile into romaine lettuce leaves and if you’re like half our family…top with feta cheese!

To Meal Prep

Make as instructed above minus the lime, cilantro, and chives. Freeze in a sealed ziplock bag or glass container once cooled. To reheat, thaw, pour into a pan, and add in lime, chives, and cilantro. Simmer for a minute so all the flavors can meld and enjoy!


Pair With

Brown rice, cottage cheese, vegetable sticks, or avocado/tomato slices.
