Creamy Tuscan Chicken Pasta
Silky noodles, punchy sun-dried tomatoes, and perfectly juicy chicken? Yes please!

Supremely delicious this throw together meal is special enough for guests yet simple enough to be a weeknight dinner standby. Besides, pasta is a universally accepted comfort food which just makes it that much better. Recently we adopted an organic, whole wheat, protein pasta in lieu of the regular stuff and it has us all feeling much better about our consistent consumption(regardless of any real benefit or not).

Ingredients
4 (6-ounce) boneless skinless chicken breasts
1 tsp Italian Seasoning
1 tsp salt
½ tsp pepper
3 T. olive oil (use the olive oil from the sun-dried tomato jar for extra flavor)
4 garlic cloves, minced
¼ C onion, chopped
½ C sun-dried tomatoes, thinly sliced
2 C spinach
1 can coconut milk
¼ C freshly grated parmesan
10 oz pasta
Mushrooms (optional)
To Make
Cook your pasta according to package instructions. Tenderize chicken, and sprinkle with italian seasoning, salt, and pepper. Brown for 3-4 minutes on each side in half of the olive oil. Remove from pan, and sauté your garlic, onions, and mushrooms in remaining olive oil until soft. Slice your chicken and return to the pan then add the rest of the ingredients. Simmer until chicken is cooked through and sauce thickens. Add in cooked pasta and stir until well combined. Top with red pepper flakes, parmesan cheese, and black cracked pepper…

I don’t know about meal prep, but this is fabulous as leftovers! Make once and enjoy throughout the week—if it lasts that long.
