Quick Morning Quiche

Recipe
9 eggs
1 C cottage cheese
½ tsp salt
½ tsp garlic powder
pinch of cayenne
pepper to taste
2 C spinach, chopped
1 C mushrooms
½ C ham or bacon
½ C onion
6 siete tortillas
To Make
Preheat the oven to 350. Make sure the oven rack is in the center. Blend the eggs, cottage cheese, garlic powder, salt, cayenne, and pepper until smooth. Sauté the ham, onion, pepper, mushrooms, and spinach until crisp tender and fragarant. Layer the tortillas in the bottom of a 9x13 pan. Pour the blended egg mixture on top and then spoon your sautéed goodies evenly across. Bake for 30-40 minutes until the center is set. Let it rest for 5-10 minutes before slicing. Serve with fresh fruit for an incredibly yummy breakfast!
To Meal Prep
Make as directed, cool, cover, and refrigerate. When ready to eat, pop it in the oven/microwave for the fanciest tasting four minute meal you’ve ever eaten. Or just enjoy it chilled, it’s great both ways!
